【Main ingredient】Pork belly, water chestnut (also called horse hoof)
【Extraditional Ingredients】5 green onions, 1 piece of ginger, half a single garlic, 2 star anise, a little rock sugar, appropriate amount of pepper
[Method] 1. Cut ginger and garlic into small slices and cut green onion into sections; add water to a boil in the pot, add peppercorns, 1/2 of ginger slices, pork belly, and cook for about 15 minutes until the chopsticks can be easily poked into the meat and then pick it up;
2. Peel and cut the water chestnuts into pieces and set aside; pick up the pork belly and cut it into small cubes when it cools until it is not hot;
3. Put the pork belly evenly into the pot (no oil added), stir-fry the meat until golden brown, leave a little oil as a base oil on the stir-fry (the oil you pour out can be used to stir-fry vegetables);
4. Turn to low heat, add a few rock sugar, and stir-fry slowly until the sugar melts; after the sugar is colored, turn to high heat, add garlic slices of ginger, and star anise slices of scallion and stir-fry;
5. Add water chestnuts, add appropriate amount of salt to season, stir-fry evenly;
6. Add appropriate amount of boiling water, and the amount of water is over the ingredients. After boiling, turn to low heat and simmer. When the juice is about to dry, add appropriate amount of dark soy sauce to color, stir-fry continuously, wrap the juice evenly on the ingredients, and finally sprinkle with chopped green onion.
ps:
1. First boil the pork belly with pepper and ginger slices to remove the fishy smell; then stir-fry out some oil so that the meat will not be greasy. Of course, you should not stir-fry too hard, which will turn into oil residue and taste very tiring.
2. When the final juice collection stage is completed, you must stir-fry continuously with a spatula so that the soup can be evenly wrapped on each piece of meat and water chestnuts, so that it tastes delicious enough.
