021. Picking watermelon

In the past 10 minutes, Sun Gang arrived at his aunt's house. They were having breakfast.

For fermentation pots and tanks, they must not be stained with oil or raw water, so as to avoid fermentation failure or white film, which is also called long flowers.

Cover the tank with clean gauze to facilitate breathability. Never use plastic wrap or plastic film to seal it. Stir with bamboo and wooden spatula up and down once a day in the morning and evening to fully ferment.

When the sauce body no longer produces foam after half a month, you can add shredded ginger, and after one month the sauce is rich in aroma, you can eat it. If you find that the sauce is thicker, you can use a small amount of star anise and cinnamon to boil water. Do not use raw water.

These are all methods of making watermelon sauce. Sun Gang's mother will add fried sesame seeds, cooked peanuts, and stir-fried pork to diced.

After the sauce is fermented, add dried chili and stir-fry.

The watermelon sauce made in this way is rosy and moist but not turbid. The spicy taste is thick, the more you chew, the more fragrant it becomes, the more you chew, the faint sweetness of the watermelon is permeated with. The red pepper powder is no longer spicy, and the shredded ginger is soaked in the fragrance of beans, and it is even chewy. On the morning and evening table, hold a thin and crispy pot sticker cake and bring a plate of delicious watermelon sauce, which makes you unable to bear it. The sauce soup is even more wonderful. Scoop a small spoon of noodles and stir it up and down evenly. There is a fragrance, spicy, sweetness, and the refreshing taste of the watermelon is integrated into it.

If Sun Gang wants to eat such delicious watermelon sauce, he may have to wait for a while.

"Dad, let's plant some watermelons next year," Sun Gang's family loves to eat watermelons and buys a lot every year.

"Okay, you can plant some things, but only sandy land." The Sun family's fields did not have sandy land.
