After the morels are processed, Yunsu will make the dough.
Because the noodles need to be rested and the waiting time is relatively long, she has to mix the noodles first and then deal with other ingredients.
Yunsu takes out an appropriate amount of noodles, cracks two eggs into the noodles, a small spoonful of salt and stirs evenly.
Then add mountain spring water and stir the flour into fluff while pouring water into the noodles.
After all the flour has turned into flocculent form, knead it into a smooth and slightly harder dough.
Place the kneaded dough in a bowl to rest, then cover the bowl with a lid.
Wash the pork bones you bought before in water. If you have time, you can soak them for a while to remove the dirt inside.
Yunsu was a little anxious. After washing the pork bones, he took out part of them.
The remaining pork bones continue to be soaked in water and taken out for use when setting up the stall in the evening.
Break open the cleaned pork bones, and they will be filled with bone marrow.
Bone marrow looks like fat, but as long as it is heated a little, it will become shiny.

Place the pork bones in a pot under cold water, boil the water and skim off the foam inside, then rinse the pork bones in the water.

After the pork bones have been cooked for a while, add the morels.
It only takes ten minutes to cook fresh morels. If you put them in too early, the cooking time will be too long.
If the cooking time is too long, the nutrients inside will be lost and the flavor will be affected.
When cooking the pork bone soup, Yunsu cleaned all the green onions she bought earlier.
Some of it is put in the refrigerator to be used at night, and some of it will be used later.
Take out the spring onions and divide them into two parts.
Place a portion of scallions on the chopping board, and divide the white and leaf parts into two halves.
Press the green onion leaves with a kitchen knife, and some cracks will appear on the crisp and tender green onion leaves.
Fold the green onion leaves into long pieces of about five centimeters, and then cut the green onion leaves into thin strips.
Because I used a kitchen knife to make cracks in the green onion leaves, now the green onion leaves will not be too long.
Shake the green onion leaves with both hands. The green onion leaves will bend into a small arc, which is very beautiful.
The white part of the scallions is placed on a plate, waiting to be dipped in egg sauce.
After the onions are processed, the bone broth is almost ready.
Put the morels that you cleaned earlier into the bone soup pot and continue to cook.

Crack the eggs into the bowl and beat the eggs.
Heat oil in a pot, turn off the heat when the oil is hot and smoking.
Pour the eggs into the oil pan and stir while pouring.
Use the remaining heat of the pot to fry the eggs until they become fluffy.
Then add soybean paste, sweet noodle sauce, a small amount of water, turn on low heat, and stir the eggs and sauce evenly.
Take out the egg sauce and set it aside until the noodles are cooked, then you can eat it.
The aroma of bone broth and egg sauce finally woke the three of them up.
